Easy Creamy Mushroom and Chicken Creamy Pasta

This is a perfect recipe for those nights when you're exhausted and need to pull something together quickly. It's also pretty easy so it's perfect for those of you cooking newbies who are limited on their cooking skills. If you're a veteran cook, you're going to love this simple recipe because it's pretty versatile, you can add whatever you want. This recipe gives you pasta that's creamy and delicious. Eating this will leave you with a celebration of flavors in your mouth. Enjoy!


Ingredients

4-8 oz of fettuccine or linguine

10 tablespoons of butter

4 chicken breasts (or boneless thighs)

1 cup of freshly sliced mushrooms (I use two packages of cremini mushrooms)

1/2 onion chopped

2 garlic cloves minced (I use probably 5-6, I like the flavor it gives)

8 oz (1 block) of cream cheese, cut into small pieces (you can add more if you like it creamier)

2 tablespoons of fresh parsley, chopped

1 tablespoon of fresh basil, chopped (fresh is better but dried works too)

2/3 cup of boiling water from the noodle pot

Cooking instructions

  1. Put on a large pot of salted water to boil, then add pasta to cook. Save some of the boiled water for the sauce; about a 1 1/2 cups.

  2. Cook your chicken and shrimp while the pasta is boiling. If you're using frozen shrimp, use lukewarm water to help with thawing.

  3. Melt 2 tablespoons of butter over medium heat and sauté the mushrooms until they are soft and brown. Add salt and pepper to taste. Put your mushrooms in a bowl and put it aside.

  4. Melt the remaining butter, then saute the minced garlic and chopped onions until semi cooked.

  5. Add the cream cheese, basil and parsley. Simmer the cream cheese mixture until it's melted. Then add some boiled noodle water or kettle water to the skillet. Mix it in and stir quickly until the sauce is smoothed out.

  6. Mix in the cooked chicken (other meat) and mushrooms and let simmer on low heat for about 10 minutes. Stir it often until everything is hot and the sauce is thickened.

  7. Taste the sauce. Add fresh ground pepper and salt if needed.

  8. Fold the sauce in to the cooked noodles, top with fresh parmesan cheese and serve!!!
