Easy Chicken Tacos, Only 5 Ingredients

This is a great recipe for the days that you don't have lot of time to prepare a meal. It's the perfect recipe for a Friday or Saturday evening, although I don't believe anyone should cook on a Friday after working all week. All you need are 5 ingredients!!! You simply throw them together, go about your day, and dinner will be ready when it's time to eat.


I heard about this recipe from a colleague. Some of the best recipes I have are from my friends I've met through work. I've made this one a few times and it's lovingly devoured every time.


I've used the packaged seasoning and homemade seasoning and they both resulted in excellent tacos. Alton Brown has a good taco seasoning that he's named Taco Potion. that you've got to try. For the salsa, the store-bought version works perfectly but if you have some homemade salsa, you'll take your tacos up a notch. My neighbour use to give me the best homemade salsa and then she moved far away. Her delicious salsa was a lot like the recipe for salsa roja I found on My Latina Table. Only use the homemade salsa or taco seasoning if you have it lying around. Remember, the key to this recipe is to keep it simple.


You can't go wrong with this one. Tacos are always a hit because everyone gets to make them exactly how they want them. For toppings, I usually use what I have in the fridge. Some great toppings ideas are sour cream, salsa, old cheddar cheese (finely grated), diced cucumbers, green and red peppers, sliced jalapenos (pickled or fresh), chopped onions, and guacamole (home made).


Ingredients

3-4 boneless skinless chicken breasts

1 cup of salsa

1 tablespoons of Taco Seasoning

1 tablespoon of oil

1/2 teaspoon black pepper


Instructions

  1. Rinse the chicken breasts in water with lemon juice, then drain them and dry them.

  2. Sprinkle the chicken with some black pepper. Don't add salt. There will be enough salt from the salsa and taco seasoning.

  3. Add about a tablespoon of olive oil to your slow-cooker and brush it around. Then throw in the chicken breasts.

  4. Sprinkle the chicken with the taco seasoning.

  5. Throw the salsa on top of the chicken.

  6. Cook on low for 6 hours, or high for 3 hours.

  7. Shred the chicken and serve with your favorite taco toppings.
